Kiritsuke handmade by Hokiyama Hamono, in Kochi Prefecture in Japan, known for the quality of handmade blades, which he has been making for over 800 years.
The blade is made of Silver 3 steel, also called Ginsan Steel or Ginsanko and has a hardness of about 63 HRC. The main feature of this steel is that it resists rust well and perfectly retains its sharpness. The top of the blade has a Nashiji finish, which literally means "pear peel" in Japanese, which gives the blade a rough, unfinished, rustic look. In the lower part of the blade there is a very well highlighted dividing line between the different layers of steel that make up the knife. This type of forging is called San-mai, with the softer outer layers protecting the inner hard core from external factors.
The handle has a symmetrical oval shape and is made of rosewood.
The kiritsuke is a multipurpose kitchen knife, suitable for cutting vegetables, meat and fish.

Use and maintenance:
- Wash by hand after each use, without the use of harmful detergents and metal sponges that could damage the blade, and dry the knife with a soft cloth.
- Do not cut bones or frozen food as the blade may chip.
- To sharpen the knife use a stone and not a sharpener.
