Gyuto produced by Harukaze in the city of Tosa, Japan.
The blade has a Hitachi Silver 3 steel core, also called Ginsan Steel or Ginsanko, coated with stainless steel with a Nashiji finish, which literally means "pear peel" in Japanese, to protect and beautify the blade. In the lower part of the blade there is a very well highlighted dividing line between the different layers of steel that make up the knife. This type of forging is called San-mai, with the softer outer layers protecting the inner hard core from external factors.
The handle is in traditional Japanese style, with an oval shape and is in magnolia wood with a ring in pakka wood.
The gyuto is a very versatile knife and can be used for vegetables, meat and fish.

Use and maintenance:
