Sujihiki by Sakai Takayuki with a particular combination, in fact, has a western-style blade and a Japanese-style handle. The blade is made from 45 layers of corrosion resistant hammered Swedish Damascus steel. This magnificent Swedish steel is certified and recognized around the world. The blade measures 240mm and has a hardness of 60HRC. The handle, in Japanese style, is very elegant and light and is made of magnolia wood with a resin ring. The color of the bezel may change from the one in the photo. Since the handle is made of wood, you have to be very careful not to leave it in contact with water for a long time and to dry it carefully. This knife is also suitable for use by left-handed people as the blade is sharpened on both sides. Sujihiki is suitable for filleting and cutting into very thin slices.
This knife if used and treated with care is destined to last a long time.
Use and maintenance:
- Wash by hand after each use, without the use of harmful detergents and metal sponges that could damage the blade, and dry the knife with a soft cloth.
- Do not cut bones or frozen food as the blade may chip.
- To sharpen the knife use a stone and not a sharpener.
