Hand-forged funayuki by Yoshida Hamono, a Japanese family-owned company with a centuries-old tradition in the production of Japanese swords (Katanas). The blade is made of SUJ-2 (carbon) steel and is finished according to the process called Kuro-uchi, which in Japanese literally means "black coat", meaning the blade is not polished but is left with the dark patina to protect the blade and give it a traditional Japanese rustic look. The blade needs some care, as it is not stainless steel, so it should be washed and dried very well after use to prevent it from corroding.
The handle is traditional Japanese with a modern touch given by the dark color, ranging from shades of gray to red, reminiscent of the reflections of neon signs in a Tokyo night.
It is made of treated maple wood, a colored pigment is added during its processing which is absorbed by the wood fibers, creating interesting and unique patterns. Each handle is therefore unique.
The funayuki is a superb hybrid of various traditional forms of Japanese knives, such as gyuto, santoku and deba, making it a very versatile knife suitable for various tasks in the kitchen.

Use and maintenance:
- Wash by hand after each use, without the use of harmful detergents and metal sponges that could damage the blade, and dry the knife with a soft cloth.
- Do not cut bones or frozen food as the blade may chip.
- To sharpen the knife use a stone and not a sharpener.
