Santoku by Sakai Takayuki with a particular combination, in fact, has a western-style blade and a Japanese-style handle. The blade is made of 45 layers of hammered Swedish Damascus steel, is a very hard steel, with a hardness of 60 Rockwell and is resistant to corrosion. This magnificent Swedish steel is certified and recognized around the world. The handle is very elegant and light and is made of magnolia wood with a resin ring. The color of the bezel may change from the one in the photo. Since the handle is made of wood, you have to be very careful not to leave it in contact with water for a long time and to dry it carefully. The Santoku is the traditional Japanese universal knife suitable for cutting all ingredients, it is very versatile and recommended for novices of the "super sharp cut". The blade measures 180mm.
This knife if used and treated with care is destined to last a long time.
Use and maintenance:
- Wash by hand after each use, without the use of harmful detergents and metal sponges that could damage the blade, and dry the knife with a soft cloth.
- Do not cut bones or frozen food as the blade may chip.
- To sharpen the knife use a stone and not a sharpener.
