Gyuto made and hand forged by the Japanese company Tojiro. The blade core is VG10 steel coated with 63 layers of softer steel. The layers form an elegant black Damascus pattern that extends along the entire blade. The blade measures 210mm and has a hardness of 61HRC. The handle, with a traditional Japanese shape, is in fire-tempered chestnut wood with a resin ferrule. The wood is covered with a clear varnish to increase water resistance and reduce discoloration.
The Gyuto is a multipurpose knife, suitable for cutting meat, fish and vegetables.
This knife if used and treated with care is destined to last a long time.
Use and maintenance:
- Wash by hand after each use, without the use of harmful detergents and metal sponges that could damage the blade, and dry the knife with a soft cloth.
- Do not cut bones or frozen food as the blade may chip.
- To sharpen the knife use a stone and not a sharpener.
